You can top your sushi rice with anything you have around! Here we have pickled ginger, scallion, pickled shiso, umebushi, black sesame seeds, dried chive blossom, and a 6 minute honey egg*** —— Honey eggs: bring eggs and warm water to boil; cover and let sit for 6 minutes; place eggs in an ice bath to stop cooking; peel them; add them to a mixture of 1 cup shoyu, 1/4 cup honey; and one TB mirin; let them sit for at least an hour (the longer they sit the more flavor they take on
